Our Favorite Recipe of the Month: Healthy Sloppy Joes Recipe
Kait and I tag team our food prep, but as two full-time working people, getting healthy food on the table can be a challenge. We’ve been experimenting more with sheet pan dinners (one dish to wash) and good freezer meals. This one falls into the freezer category. It is packed with veggies, healthy meat, and a delicious, but not as calorie heavy sauce as regular sloppy joes. We like to throw it in a wrap or eat it with tortilla chips, but it is delicious in the standard bun as well.
The other great thing about this recipe: you can use whatever ground meat you have in your refrigerator whether that is beef, pork, chicken, turkey or lamb. Give it a try!
